4 sm Kohlrabis, peeled, chunks** 1 lg Onion, chopped 2 Sweet potatoes, peeled & -chunk 2 Zucchini, sliced thick 5 Fresh tomatoes -- (or 16 oz can) 1 cn garbanzo beans & liquid (15 -oz can) 1/2 c Couscous (or bulgar wheat) 1/4 c Raisins 1 t coriander, ground 1/2 t turmeric, ground 1/2 t cinnamon, ground 1/2 t ginger, ground 5 T cumin, ground 3 c Water
Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.
Serve the couscous separately, if desired.
** Parsnips may be substituted for the kohlrabi. * Chick-peas
